Rice Cake with Chocolate

This rice cake with chocolate recipe is the easiest, most delicious snack EVER! A crispy rice cake topped with a chocolate peanut butter cup, melted to perfection, and then topped with a toasted marshmallow and sea salt! WOW!

This is the perfect snack or dessert! Only 4 ingredients, made in less than 5 minutes, and kid friendly!

This recipe is one of my go-to salty-sweet snacks! This easy snack is super quick to prepare, chocolatey, and perfect for the whole family. Not to mention kid-friendly!

Make this recipe ahead of time and store it in the freezer for a quick salty-sweet dessert or sweet snack at any time! This recipe is delish cold and stores easily in the freezer!

This recipe was inspired by one of my other favorite salty and sweet snacks! My chocolate popcorn recipe! A MUST try!

Chocolate Rice Cake Ingredients

The best thing about this recipe is that it has only four ingredients! Many of these ingredients you already have in your fridge or pantry! For this sweet and flavorful recipe, you will need the following ingredients:

Rice cake with chocolate ingredients: rice cake, peanut butter cup, sea salt, and marshmallows.
  • Rice cake-I used a plain brown rice cake for this recipe, but feel free to use any flavor rice cake that you prefer!
  • Chocolate peanut butter cup-I used a dark chocolate peanut butter cup for this recipe. Still, a milk chocolate or chocolate almond butter cup would also be delicious in this recipe.
  • Marshmallows-Marshmallows or marshmallow fluff are perfect for this recipe! I recommend toasting slightly under the broiler for that toasted, s’mores flavor!
  • Sea salt – Sea salt is an optional ingredient, but it pairs perfectly with the peanut butter, chocolate, and marshmallow! I recommend not skipping this ingredient.

Use the following step-by-step instructions for how to make this delicious rice cake with chocolate recipe:

Preheat your broiler to “low”. Place your rice cake on the baking sheet.

Then place a single chocolate peanut butter cup on top.

Place the rice cake in the oven on the top rack and broil on “low” for 1 minute at a time until the chocolate peanut butter cup is completely melted.

Remove the rice cake from the oven. Then use a spoon to spread the chocolate and peanut butter over the surface of the rice cake.

Add two marshmallows to the top of the rice cake. Place back into the oven, on the top rack, and broil on low for 30 seconds to 1 minute until toasted to the desired amount.

Remove from the broiler. Top with sea salt and serve warm. Enjoy!
