The best thing about this recipe is that it comes together so quick! Many of these ingredients you already have in your fridge or pantry! For this savory, and flavorful recipe you will need the following ingredients:

- Panko bread crumbs-Feel free to use regular bread crumbs, or crushed crackers for this recipe, if you do not have panko bread crumbs.
- All-purpose flour-You could also substitute corn starch, or gluten-free flour, for this recipe.
- Dried basil-Dried basil gives a wonderful Italian flavor to these zucchini fries!
- Fresh basil-Also, using fresh basil gives a delicate freshness that helps to balance out all of the flavors! If you do not have fresh basil, you can add additional dried basil instead.
- Dried oregano-Oregano, and basil, go together beautifully in this recipe.
- Onion powder-You can also use minced dried onion if you do not have onion powder.
- Garlic powder-Feel free to substitute minced dried garlic if you do not have garlic powder.
- Eggs-For a vegan option, you can substitute Greek yogurt for the eggs. This works just as well!
- Zucchini-Fresh zucchini, instead of frozen, is super important for this recipe and decreasing the water content.
- Canola oil-Or any other frying oil that you prefer that has a high smoke point, like vegetable oil.

Use the following step-by-step instructions for how to make these deliciously crispy zucchini fries:

Add canola oil to cast iron pot and pre heat to 350 degrees Fahrenheit using a frying thermometer. Slice zucchini into wedges.

Mix the panko bread crumbs and seasonings in a shallow bowl. Then mix the eggs and water into an egg wash in a separate shallow bowl.

Dredge the zucchini wedges into the egg wash mixture and then the panko mixture. Then fry in batches in the canola oil until golden brown.

Season the freshly fried zucchini fries, while on the cooling rack, with salt. Allow to cool and then enjoy!
Hint: Ensure that you fry in small batches so that your oil temperature does not drop too low when frying. Then ensure even frying and a crispy, golden brown texture.
Can I make these zucchini fries in an air fryer?
Yes! To make these homemade zucchini fries in the air fryer you would still follow the above step-by-step instructions but instead of heating your oil of choice, you would preheat your air fryer. Set your air fryer to 390 degrees Fahrenheit and set the time to 12 minutes.
Spray your air fryer basket with oil spray, place the zucchini fries in the air fryer, spray the zucchini with oil spray on all sides, and then close the air fryer basket. Flip the zucchini half way through. Then remove when they are golden brown. Allow time to cool, season, then enjoy!

Substitutions
As amazing as these crispy zucchini fries are, they are easily made vegan or gluten-free!
- Vegan - instead of using eggs to coat your zucchini fries, substitute Greek yogurt! This works just as well and allows the panko mixture to stick perfectly!
- Gluten-free - use gluten free panko bread crumbs, with gluten free flour to make this recipe!

1 wire rack- to allow the excess oil to drain while the fries cool.
Optional: An air fryer if you would prefer to air fry your zucchini sticks instead.
Storage
You can store your fries in an air tight container in the fridge for 3-4 days.
You can also freeze your zucchini fries in the freezer for up to 3 months! I recommend wrapping your zucchini fries in parchment paper and aluminum foil and place in a freezer safe plastic bag.

When cutting a zucchini into fries, follow the following instructions: cut the very ends off of the zucchini and then discard. Instructions
Zucchini Fries
- Add canola oil to cast iron pot and pre heat to 350 degrees Fahrenheit using a frying thermometer.
- Mix the panko, flour, salt, pepper, seasonings, and fresh basil together in a shallow pan, set aside.
- Mix eggs and 2 tablespoon of water together in a separate shallow pan to create an egg wash.
- Cut the ends off the zucchini then cut them in half then slice them into fries.
- Take the zucchini fries and toss them in the egg wash then panko mixture and repeat until double coated!
- Put the double breaded zucchini fries into the frying oil. Fry until golden brown approx. 1 to 1 ½ min per side (watch closely). When finished place on wire rack for cooling.
- Season with salt to taste while the fries are still hot so it sticks.
