Homemade Chicken Egg Rolls Recipe (Fried)-These savory eggrolls are stuffed with roasted chicken, veggies, and fried to crunchy perfection! They are paired with a perfect sweet apricot dipping sauce that will make your taste buds sing! This recipe is so simple but so delicious!

Serve these up with a side salad for a complete meal or honestly on their own because they are THAT GOOD! Also, a great idea for appetizers served on a toothpick which I have used multiple times! DO NOT skip the sauce! Everything in one bite is that perfect balance!

Ingredient Notes
To make these delicious crispy egg rolls, you will need the following ingredients:

Egg Rolls
- Chicken
- Olive Oil Or butter
- Pepper
- Onion
- Carrot
- Cream cheese
- Canola oil (or your preferred frying oil)
- Egg roll wrappers
- Lettuce
Apricot Sauce
- Apricot jam or preserves
- Water
- Dijon mustard
- Soy Sauce

Use the following step-by-step instructions for how to make these delicious chicken egg rolls:

Slice peppers and onions. Use peeler to peel ribbons of carrots. Shred chicken.

Add the apricot jam, water, soy sauce, and Dijon mustard into pot. Cook over medium heat for 10-15 minutes.

Add the sliced onions and peppers and cook until soft about 3-5 minutes. Take a carrot and use a peeler to peel the entire carrot then place the ribbons of carrot in the pan to soften for another 3-5 minutes.

Preheat the oil to 375 degrees Fahrenheit. While the oil is heating, assemble the ingredients.

Take a wrapper and put down a spoonful of cream cheese, a few pieces of chicken, a spoonful of the pepper/onion/carrot mixture, and then a few leaf's of lettuce on top.

Take some water, wet your finger, and trace around the edges of the wrapper (this helps the eggrolls roll up tight). Then fold one corner over the filling.

Then tuck in each side as pictured above.

Roll all the way until the egg roll wrapper is sealed around the filling.

Then place chicken egg rolls in the preheated oil seal side down. Cook for about 2 minutes on each side.

Place on a cooling rack with paper towels underneath to soak up any excess oil and to allow the egg rolls to cool. Then serve with the apricot sauce!
Can I make these chicken egg rolls in an air fryer?
Yes! To make these chicken egg rolls in the air fryer you would still follow the above step-by-step instructions but instead of heating your oil of choice, you would preheat your air fryer. Set your air fryer to 390 degrees Fahrenheit and set the time to 12 minutes.
Spray your air fryer basket with oil spray, place the egg rolls in the air fryer, spray the egg rolls with oil spray on all sides, and then close the air fryer basket. Flip the egg rolls half way through. Then remove when they are golden brown. Allow time to cool, then enjoy!

Substitutions
As amazing as these chicken egg rolls are, they are easily made vegan or vegetarian!
- Chicken- Stuff these egg rolls with soy- marinated tofu or mushrooms for a delicious vegan or vegetarian meal!
- Cream Cheese - You can easily substitute vegan cream cheese in these egg rolls for that creamy element.
Variations of Dipping Sauces
The apricot soy dipping sauce for this recipe is sweet, savory, and compliments these egg rolls perfectly! However, these egg rolls also pair with a number of other sauces:
- Sweet chili sauce
- Soy sauce
- Teriyaki sauce
- Spicy mustard
- Duck sauce
- Honey mustard
You can easily make this recipe soy-free as well! I use this soy-free soy sauce in my Asian recipes at home!
Equipment
For this recipe you will need:
- 1 small pot-to make the dipping sauce
- 1 medium saucepan-for frying the egg rolls and cooking the vegetables
- 1 wire rack- to allow the excess oil to drain while the egg rolls cool.
Optional: An air fryer if you would prefer to air fry your egg rolls instead.
Storage
You can store your egg rolls in an air tight container in the fridge for 3-4 days.
You can also freeze your egg rolls in the freezer for up to 2 months! I recommend wrapping your egg rolls in parchment paper and aluminum foil individually and place in a freezer safe plastic bag.

Reheating Instructions
When reheating your chicken egg rolls after storing in the fridge, or the freezer, I recommend reheating in the air fryer or oven to help them crisp back up in the warming process.
Top tips
Here are some top tips as always:
- When frying your egg rolls, use at least 2 inches of oil in the pan. You can also deep fry these egg rolls.
- When frying, always place the egg rolls seam side down to seal your egg rolls to prevent the filling from escaping the egg roll wrapper in the frying process.
- When placing your egg rolls in the fryer, always place the egg rolls in the oil facing away from you. This will prevent oil splashing onto you in the cooking process.
- If pan/deep frying your egg rolls, be sure to use an oil with a high smoke point like canola oil to prevent your egg rolls from burning.

Typically chicken egg rolls contain cabbage, cooked veggies, and ground/shredded chicken. My homemade chicken egg rolls contain sauteed vegetables, crunchy lettuce, cream cheese, shredded chicken, and wrapped in a delicious crispy egg roll wrapper.

Equipment

Ingredients
Egg Rolls
- 1 Rotisserie chicken Or any leftover roasted chicken
- 2 tablespoon Olive Oil Or butter
- 1 Large Pepper Sliced thin
- 1 Medium Onion Sliced thin
- 1 Large Carrot Peeled into ribbons
- ½ Cup Cream Cheese
- 1.5 Liter Canola oil Or your preferred oil
- 1 Package Egg roll wrappers
- 1 Cup Lettuce Of your choice
Apricot Sauce
- 2 Cups Apricot jam You can also use preserves here
- ½ Cup Water
- 1 tablespoon Dijon mustard
- 3 tablespoon Soy Sauce You can use soy free soy sauce if you are soy free!
Instructions
Apricot Sauce
- Place a medium pot under medium to high heat. Then add the apricot jam, water, soy sauce, and Dijon mustard into pot.
- Stir well. (note: Keep your eye on the pan, so that it does not boil over!)
- Cook on medium heat for the next 10-15 minutes, stirring occasionally, until slightly thick. (note: it will thicken as it cools as well). Then remove from heat and set aside.
Egg Roll
- Sauté the Vegetables: Take a deep cooking pan and place on medium heat. Add the olive oil/butter to the pan. Add the sliced onions and peppers and cook until soft about 3-5 minutes. Take a carrot and use a peeler to peel the entire carrot then place the ribbons of carrot in the pan to soften for another 3-5 minutes. Place the carrot/onion/pepper mixture into a bowl and set aside.
- Prep: Wipe out your pan and empty the contents of your canola/vegetable oil container into the pan (do not heat yet). Take your rotisserie chicken and pick through, separating the meat from the bones and set aside.
- Assemble the Egg Rolls: Preheat your oil over medium heat to 375 degrees Fahrenheit (use a thermometer). Take your eggroll wrapper and start to assemble your eggrolls. Take a wrapper and put down a spoonful of cream cheese, a few pieces of chicken, a spoonful of the pepper/onion/carrot mixture, and then a few leaf's of lettuce on top. Then take some water, wet your finger, and trace around the edges of the wrapper (this helps the eggrolls roll up tight). Then roll up your eggrolls according to eggroll wrapper package instructions and they are ready to fry!
- Fry the Egg Rolls: Always place the eggrolls in the oil envelope side down to seal and always place in the oil AWAY from your body. Rotate in the oil until golden brown about 2 minutes per side. Then drain on a wire rack. Dip in that tasty sauce and enjoy!
