Banana Pudding Ingredient Notes
The best thing about this recipe is that it is only 7 ingredients! Many of these ingredients you already have in your fridge or pantry! For this healthy, and flavorful recipe you will need the following ingredients:

- Coconut milk-I have used both canned full-fat, and light, coconut milk for this recipe and they both work beautifully!
- Sugar-I used organic granulated sugar for this recipe but feel free to use your preferred sweetener. Agave nectar, and date syrup also work for this recipe!
- Salt-just a pinch of sea salt is all that is needed for this recipe.
- Arrow root powder-You can also use cornstarch if you are not vegan.
- Vanilla Extract-Vanilla powder and paste will also work in this recipe.
- Granola-you can use granola for breakfast or vanilla wafer cookies for dessert!
- Bananas-perfectly ripe bananas work perfectly!

Use the following step-by-step instructions for how to make this delicious vegan banana pudding recipe:

Heat medium-sized pot under medium heat. Add coconut milk, sugar, and salt. Mix well. Allow to heat up until just under a boil (do not let the mixture boil).

Then take 3 tablespoons of the heated milk mixture and whisk with 3 tablespoons of cornstarch in separate bowl and mix until smooth with no lumps. Then whisk cornstarch slurry back into heated milk mixture.

Continue to whisk over medium-high heat until thickened, about 8 -10 minutes. Once at your desired thickness, turn off the heat. Mix in vanilla extract. Refrigerate.

Then assemble your parfaits! Granola, then pudding, then bananas, and repeat until filled. Enjoy!
Hint: Be sure to add plastic wrap to the top of the bowl, pushing down onto the surface of the pudding to avoid a skin forming while cooling. Place in the fridge for 1 hour minimum to cool.

- Dairy- instead of using coconut milk, feel free to use dairy milk.
- Low fat - when using coconut milk, choose the light canned coconut for a lower fat option.
