Directions

  1. Preheat the oven to 350°F and line a baking sheet with parchment paper.
  2. Lay out the first sheet of puff pastry on a clean surface and cut it into 6 even pieces along the existing trifold lines.
  1. Place a generous tablespoon of strawberry jam in the center of each pastry rectangle, spreading it out while leaving about ½ inch of space from the edges.
  1. In a small bowl, whisk the egg to create an egg wash and brush it onto the edges of each pastry.
  2. Place the second sheet of puff pastry over the jam-covered pieces and gently press the edges together. Cut the top layer to match the bottom layer.
  1. Transfer the danishes to the prepared baking sheet. Use a fork to seal the edges and a toothpick to poke holes throughout the pastry.
  1. Brush the tops with more egg wash and bake for 25 minutes, or until lightly browned.
  2. While the pastries bake, prepare the icing. In a mixing bowl, combine powdered sugar and salt, then whisk together.
  1. Add milk and vanilla, whisking until a smooth, slightly thick glaze forms. If the glaze is too thick, add more milk as needed to reach the desired consistency.
  2. When the pastries are out of the oven allow them to cool for 5 minutes.
  3. Pour and spread the frosting over each pastry just like a strawberry poptart and sprinkle with colorful sprinkles on top.
  1. Transfer these to a cooling rack and allow the icing to set for at least 5 more minutes before enjoying while still warm!
