Banana Oat Pancakes

How to Make Fluffy Pancakes

Place all ingredients into a blender. Blend on high until the mixture is completely smooth.

Allow the batter to rest in the blender while you preheat your pan.

Lightly spray a griddle or pan with olive oil.

Pour 1/3 cup of the pancake batter onto the heated griddle or pan. Cook for 2-4 minutes, until bubbles form and the edges start to brown.

Flip the pancakes and cook for an additional 2-3 minutes.

Spray the griddle or pan with olive oil again before starting the next batch.

Every other batch, rinse the pan with cold water to cool it down.

    I made these pancakes this morning. I used a 350-degree griddle, and they took longer to cook than the recipe said. Maybe I should have raised the temperature a bit, but I was concerned the inside wouldn’t cook. They’re very dense, but their taste is excellent. I’ll try them again next time I have ripe bananas available!
