Homemade Banana Oat Pancakes

These banana oat pancakes are classic breakfast staples. They are delicious, easy and oh so delightful. With the main ingredients being ripe bananas, oats, eggs, and milk, these pancakes are absolute perfection!

Ingredients
  

  • 2 medium ripe bananas
  • 2 eggs
  • 1/2 cup milk
  • 1 teaspoon vanilla extract
  • 1 ½ cups old fashioned rolled oats
  • 2 teaspoons baking powder
  • ½ teaspoon ground cinnamon
  • ¼ teaspoon salt
  • Olive oil

Instructions
 

  • Place all ingredients into a blender. Blend on high until the mixture is completely smooth.
  • Allow the batter to rest in the blender while you preheat your pan.
  • Lightly spray a griddle or pan with olive oil.
  • Pour 1/3 cup of the pancake batter onto the heated griddle or pan. Cook for 2-4 minutes, until bubbles form and the edges start to brown.
  • Flip the pancakes and cook for an additional 2-3 minutes.
  • Spray the griddle or pan with olive oil again before starting the next batch.
  • Every other batch, rinse the pan with cold water to cool it down.
