The best thing about this recipe is that it is only 7 ingredients! Many of these ingredients you already have in your fridge or pantry! For this delicious, and flavorful strawberry shortcake parfait recipe you will need the following ingredients:

- Strawberries-While fresh strawberries are preferred for this recipe, feel free to substitute frozen strawberries or strawberry jam!
- Sugar-I used a little granulated sugar for the strawberries, but feel free to use your sweetener of choice!
- Greek Yogurt-For it's high protein content, and thick consistency, I recommend using Greek yogurt for this recipe but you can use plain yogurt, or vegan yogurt as well.
- Vanilla instant pudding mix-Using the instant pudding mix powders are such a smart hack! I recommend using this mix because it makes the yogurt mixture taste like custard! Feel free to use sugar free if preferred.
- Lemon juice-Fresh lemon juice is preferred for this recipe and adds the perfect lemon flavor to the creamy custard-like filling!
- Shortbread cookies-I recommend using prepackaged shortbread cookies for this recipe for a super quick dessert hack.
- Whipped cream-Whipped cream is the perfect addition to this recipe but you can also use cool whip, or omit entirely.

Use the following step-by-step instructions for how to make this super easy strawberry shortcake parfait recipe:

Prep the strawberries by rinsing, draining well, and dicing into small pieces. Add to a small mixing bowl with sugar. Mix well and set aside.

In a separate small mixing bowl, mix the yogurt, instant pudding mix, and lemon juice thoroughly until completely combined. Set aside.

Assemble your strawberry shortcake parfaits. Start with adding a layer of the crumbled cookie to the bottom.

Then add an even layer of creamy yogurt mixture.

Add a thin layer of the strawberries. Repeat the layering steps one more time.

Then top each parfait with more strawberries and whipped cream. Serve and enjoy! Store in the fridge until ready to serve but can be eaten immediately.
Hint: If you do not have fresh, or frozen, strawberries on hand, use strawberry jam instead! If using strawberry jam as a substitution, omit the sugar ingredient step in the recipe card below.
