Strawberry Banana Cake

This Strawberry Banana Cake is incredibly soft, moist, and fluffy. It’s rich in flavor and comes together quickly, making it easy to prepare. Instructions for the Cake:

Preheat the oven to 350°F.

Grease an 8×8-inch baking dish with nonstick spray.

Whisk together granulated sugar, oil, milk, and vanilla in a large bowl.

Add the mashed bananas and stir to combine.

Sift in the flour and baking powder. Use a rubber spatula to gently fold and mix the ingredients.

Add the strawberries just before all of the flour is fully incorporated. Stir until just combined, being careful not to overmix.

Pour the batter into the prepared baking dish.

Bake for 40 minutes. Remove from the oven and let cool.

Instructions for the Glaze:

  1. In a small bowl, combine powdered sugar, vanilla, and heavy cream. Stir until smooth.
  2. If the glaze is too thick, add a teaspoon of heavy cream at a time until it reaches your desired consistency.
