A few tips with this recipe. Make sure your butter is super cold when making your pie dough and be sure to chill your dough before making the recipe! Also, make sure to completely chill your pudding before adding to the dough to make your pies to ensure a fully set pudding filling.

Ingredient Notes
The following ingredients are inspired by chocolate-covered strawberry flavors in a convenient hand pie form! Also included below are substitutions to make your baked chocolate pudding hand pie recipe allergen, gluten-free, or vegan friendly!

Chocolate Pudding Filling
- Milk (or milk of choice)
- Sugar
- Semi-sweet chocolate chips (Enjoy Life has a great vegan chocolate!)
- Cocoa powder
- Unsalted butter (or vegan butter)
- Cornstarch (or arrow root powder)
- Vanilla Extract
- Salt
Hand Pie Dough
- All-purpose flour (or all-purpose gluten-free flour)
- Salt
- Sugar
- Unsalted butter (or unsalted vegan butter)
- Ice water
- Egg (or melted vegan butter) to brush over the top
Strawberry Glaze
- Strawberry jam
- Powdered sugar
- Milk (or milk of choice)
- Sprinkles (optional)

Instructions
Below are step-by-step instructions for how to make the flaky pie crust, the creamy chocolate pudding filling, and the sweet strawberry glaze for the top! See the recipe below for more details!

Add flour, salt, and sugar to your food processor and pulse to combine. Add your cold cubed butter and do a few quick pulses to combine. Then slowly add ice cold water while pulsing until your dough comes together into a ball. Wrap your ball of dough with plastic wrap and place in the fridge for 30 minutes to an hour to chill.

Add milk of choice and sugar to a saucepan over medium heat. Whisk to dissolve.

Then add chocolate chips, cocoa powder, and butter to your milk mixture. Continue whisking over medium heat until combined.

Add cornstarch (or arrow root powder) slurry to pudding mixture while continuing to whisk over medium heat. Continue to whisk and cook over medium heat until thickened completely. The pudding should be thick, velvety and coat your spoon or whisk. Then remove from the heat and mix in your vanilla extract.

Then allow your pudding to come to room temperature and then add the pudding to a bowl. Wrap your pudding with plastic wrap (as seen above) with the plastic wrap touching the entire surface of the pudding (this prevents a skin from forming on your pudding). Then allow to cool in the fridge for 30-60 minutes or until completely cool.

While your pudding is cooling in the fridge, roll out your dough until it is about ⅛th of an inch thick. Be sure to flour your station and your rolling pin liberally to prevent sticking from occurring. Then you can use your pie dough molds to make your individual hand pie molds for stuffing. Or you can simply use a 5 inch diameter bowl as a mold to create cut outs to make it simple!

Then stuff your pie dough molds with chocolate pudding filling. Be sure to crimp the edges to seal your hand pies.

Then brush the tops of your hand pie dough with an egg wash (1 egg +1 tablespoon of water) or use melted butter (or vegan butter) to make a beautiful golden crust.

Bake your hand pies at 375 degrees for 25-30 minutes or until golden brown. Then allow to cool.

Mix the milk, powdered sugar, and strawberry jam together until you get your desired thickness. Then drizzle over top of your cooled chocolate hand pies! YUM! You can also add sprinkles!

Make these for Valentines, date night, or just because (which is always my motto)! Trust me they will be a hit! I even like to dip my hand pies in extra pudding...YUM! Make a spread for the holidays and allow your family to add their own sprinkles, glazes, etc. Either way you slice it, or don't slice it (get it! because their hand pies), these hand pies are delicious. You can easily make this recipe egg-free, dairy-free, gluten-free, or vegan! Here are some important substitutions for these delicious baked chocolate pudding hand pies.
- Egg-free -substitute the egg in this recipe for melted vegan butter to brush over the tops of the hand pies to make a golden brown crust!
- Dairy-free-substitute regular milk in this recipe for your favorite milk of choice! I have found that oat milk and soy milk are the best milk substitutes for this recipe.
- Gluten-free - use all-purpose gluten free flour for this recipe! I have found that King Arthur's gluten-free all purpose flour has worked best in this recipe.
- Vegan - along with the egg, and dairy, replacements above, you can also substitute for vegan chocolate chips! Enjoy Life is a great brand with amazing tasting vegan chocolate! You can also use arrow root powder instead of cornstarch to thicken the chocolate pudding filling!

The fun part of this recipe is the pie crust design! Feel free to make this recipe super simple by cutting out circle pie crust pieces, stuffing with chocolate pudding, and then folding them over into half moon shapes! Crimp and then done!

Store covered in plastic wrap, or an airtight container, in the fridge for 2-3 days. I would avoid freezing this recipe due to the pudding filling.
Top Tips
To avoid your pudding hand pies from being runny, make sure to do the following top tips:
- Do not skip the cornstarch (or arrow root powder) slurry step! For every tablespoon of cornstarch (arrow root powder) that is added, you would add an equal number of tablespoons of water. Then mix into a slurry.
- As you add the slurry, be sure to keep whisking the mixture
- Continue whisking over medium heat until the mixture thickens (should stick to your whisk or spoon)
- Allow to cool completely so that your pudding can finish setting before adding the pudding to your pie dough
Frequently Asked Questions (FAQ's)
Your chocolate pudding hand pie will last in an air tight container for 2-3 days in the fridge. I would avoid freezing this recipe due to the pudding filling.
Allow the chocolate pudding to cool completely and set fully before stuffing your hand pies with the chocolate pudding filling. This ensures a fully set pudding prior to going into the oven. Then when your hand pies are fully cooked, take them out of the oven, and allow them to cool completely before serving.
Yes! As your chocolate pudding cools, it will thicken! My tip is to allow the pudding to cool to room temperature and then cover with plastic wrap (with the plastic in contact with the entire top surface of your pudding mixture, and then place into the fridge until completely cooled for at least an hour!

- 1 Tablespoon Cocoa powder
- 2 Tablespoon Unsalted butter
- 3 Tablespoon Cornstarch mixed with 3 tablespoon of water to make a slurry or Arrow root powder
- ½ Teaspoon Vanilla extract
- ½ Teaspoon Kosher salt
Strawberry Glaze
- ½ Cup Strawberry jam
- 2 Cup Powdered sugar
- 1 Tablespoon Whole milk or milk of choice
- 2 Tablespoon Sprinkles Optional
Instructions
Pie Dough
- Add flour, sugar, and salt to the food processor. Pulse.
- Then cube cold butter, place in food processor, and pulse until the flour is pea-sized.
- Then slowly add ice water to the food processor while you pulse the mixture until the dough comes together into a ball in the food processor.
- Then wrap with plastic wrap and chill in the fridge until ready to roll out.
- When chilled, roll out onto a floured surface (with a floured rolling pin), and use a 5 inch bowl to cut out circles. Or use a hand pie mold which I used for this recipe.
Chocolate Pudding
- Take a medium sized saucepan and turn to medium heat.
- Add milk, salt, and sugar to the pot and whisk well. Add chocolate chips and cocoa powder to milk mixture, and whisk until dissolved. Add butter to mixture, and mix well.
- Take 3 Tablespoons of the milk mixture and mix with 3 tablespoons of cornstarch to make a smooth slurry. Then whisk the slurry into the milk mixture.
- Whisk over medium heat until thickened. Whisking often.
- Then when the mixture is fully thickened, turn off heat and add vanilla.
- Put the pudding in a heat-proof bowl and place plastic wrap over the top surface of the pudding to prevent a skin from forming.
- Chill the pudding.
Strawberry Glaze
- Mix all ingredients together until smooth and thin enough to drizzle.
- Note: If you need it thicker, add more powdered sugar.
- If you need thinner add a little more milk.
Hand Pie
- Preheat the oven to 375 degrees.
- Stuff with chocolate pudding, pinch the sides closed, and make sure you slit the top of your hand pies (unless your mold has holes like mine) for venting.
- Then place the pies on a baking sheet lined with parchment paper.
- Then use an egg wash (or melted butter of choice) and brush the hand pies to make that golden brown crust that we love!
- Then place them in the oven for approximately 25-30 minutes or until golden brown!
- Then drizzle with strawberry glaze and sprinkles of your choice (optional).
