8 Unusual Foods That Really Got Deep-Fried at State Fairs

Butter claimed the State Fair of Texas’s Most Creative award in 2009. Beer took the same honor in 2010. Those two consecutive wins show what happens when a fryer becomes a stage: familiar ingredients step into unlikely roles, and suddenly the filling becomes the whole story. The fun is in discovering how a cook turns an ordinary ingredient into that improbable bite.

These eight examples draw on Minnesota and Texas fair menus, historical awards and newer announcements. The State Fair of Texas lists September 25–October 18 for its 2026 season, but this roundup also reaches into earlier years. Treat it as a tour of real fair-food ingenuity, and check a vendor’s current offerings before planning an order.

Ranch dressing

Ranch becomes the main attraction at LuLu’s Public House, where Minnesota’s official fair directory lists Deep-Fried Ranch with hot honey. FOX 9’s July 2024 preview described the fair’s entry as buttermilk, cream cheese, and ranch seasoning, coated in panko, fried, and finished with ranch powder. That playful name hides structure, not a splash of bottled dressing dropped into oil. Minnesota State Fair

Taste of Home and Mpls.St.Paul Magazine each published firsthand tastings in 2024. Texas announced a separate Deep Fried Ranch from Tracy Scudday in 2026, so don’t assume every version shares LuLu’s filling.

Grapes

Even the grape gets a costume change. The Minnesota State Fair’s Fried Olives On A Stick listing includes eight fruit choices for its battered, deep-fried fruit on sticks: grapes, strawberries, apples, pineapple, bananas, peaches, cherries and pears.

The official directory places the stand west of Nelson Street, just south of the Grandstand. Grapes are a documented menu choice, though that list doesn’t promise every fruit will be available every time you visit.

Butter

Butter takes center stage in this historical entry. The State Fair of Texas named Deep Fried Butter its Most Creative winner in 2009, and its description puts a dough wrapper around pure butter that has been whipped, flavored, and sweetened before frying.

The wrapper is part of the actual dish, however startling the abbreviated name sounds. That 2009 award puts it firmly in the fair’s history; you’d still need a current menu to know whether it’s being served now.

Beer

The following year, beer found its own way out of the cup. The fair’s 2010 announcement describes a pretzel pocket holding beer inside, and records Fried Beer as that year’s Most Creative winner; a later official retrospective identifies Mark Zable with the entry.

The distinction is the filling: beer is enclosed within the fried dough, rather than stirred into a batter. The published description doesn’t include a measured final alcohol content.

Chocolate fudge

Fletcher’s Chocolate Corny Dog plays a little joke with your expectations. Listed by the State Fair of Texas as a 2026 sweet finalist from Beck Fletcher, it puts milk chocolate fudge inside Fletcher’s Original Corny Dog batter before deep-frying.

Yellow vanilla icing supplies the drizzle, with raspberry compote alongside. The familiar name and presentation might lead you toward a savory filling, but the organizer’s description makes the center clear: this one is fudge, right down to its heart.

Flan

Flan arrives with a pastry coat and quite an entourage. The Garza Family’s Holy Flan! Buñueloco, another sweet finalist on the fair’s 2026 list, wraps flan in puff pastry before frying.

According to the organizer, a buñuelo bowl holds arroz con leche and Blue Bell cinnamon ice cream, topped with whipped topping and caramel sauce. The pastry-wrapped flan is the fried component; the description doesn’t send that entire assembled bowl through the fryer.

Banana bread

Banana bread trades its loaf shape for a ball in Michelle Le and John Tcheng’s Deep Fried Bourbon Banana Bread. The fair’s September 9, 2026, announcement places their creation at Eat Crispies on the Midway.

Hand-cut bread is shaped into a ball, coated in batter, and deep-fried. Bourbon appears in the brown sugar caramel sauce, and powdered sugar finishes it off, so the sauce deserves its own billing.

Brisket-stuffed Twinkies

The snack cake becomes a brisket carrier in Twinkle Twinkle Brisket Star, a 2026 semifinalist the fair credits to Brent and Juan Reaves of Smokey John’s. Hollowed-out Twinkies hold smoked brisket, cream cheese, bacon, and jalapeños.

Batter and panko form the coating before frying, while raspberry chipotle sauce, bacon crumbles, and jalapeño slices finish the dish. Sweet cake, smoked meat, and a fried shell make the name worth reading twice.

Check the menu, follow your curiosity, and leave a little room for the unexpected.
