Instructions
Chocolate Raspberry Truffles
Measure all ingredients and set aside. Then parchment-line a baking sheet. Crush, or blend, the freeze-dried raspberries into a fine powder. Set aside.
Mix together the room temperature vanilla buttercream frosting, raspberry jam, and freeze-fried raspberry powder until fully combined.
Take a tablespoon of the raspberry cream mixture and place between your two hands and roll the mixture into a ball. Note: if you notice that the mixture is too warm or sticky, place the mixture in the fridge to chill for 15-20 minutes. Place each raspberry truffle on the parchment-lined baking sheet and place in the freezer for 10 minutes to set.
Melt the chocolate chips in a small microwave-safe bowl for 30 second intervals until completely melted. Remove the truffles from the freezer. Using a fork, dunk the truffles into the chocolate and place back on the parchment paper. Optional: top with sea salt.
Place the chocolate raspberry truffles back into the freezer for another 10 minutes to set. Remove from the freezer and enjoy! Store in the freezer to enjoy anytime!
