Ingredients:
Trim the celery and slice it into ¼-inch pieces. If your celery has tender leaves, leave them on for added flavor. Thinly slice the shallots. If they’re large, cut them in half first.

Wash and dry the parsley and cilantro, then chop the leaves finely.

Mince the ginger as finely as possible.

Make the Dressing: In a small bowl or measuring cup, whisk together the ginger, mustard, maple syrup or honey, lemon juice, olive oil, and salt until smooth. Taste and adjust the seasoning if needed.
