Thoroughly coat dried potatoes with olive oil—season with salt and puncture the holes with a fork along the top.
Cook in air fryer at 400°f for 30 minutes. Rotate at 15 minutes.
Let cool, slice open, and mash the inside. Season with butter and salt or for a sweeter experience, sprinkle with brown sugar!
