Combine apples, brown sugar, butter, water, cinnamon, apple pie spice, and kosher salt into a medium saucepan and simmer over medium heat for 7 minutes. Then add whiskey (optional) and simmer for another 3 minutes. Whisk in the cornstarch slurry to the mixture and continue to simmer until thickened.
Make your pie dough and wrap in plastic wrap to chill in the fridge for at least 10-15 minutes before using (the dough should be cold!). Then roll out your dough until you reach ¼ inch thickness.
Then take a bowl that is approximately 5 inches in diameter to cut out circles of the pie dough.
Add about a tablespoon of apple filling to the middle of the dough circle. Then fold the dough over into a half-moon shape. Press firmly around the edges and crimp with a fork.
