Add canola oil to cast iron pot and pre heat to 350 degrees Fahrenheit using a frying thermometer. Slice zucchini into wedges.
Mix the panko bread crumbs and seasonings in a shallow bowl. Then mix the eggs and water into an egg wash in a separate shallow bowl.
Dredge the zucchini wedges into the egg wash mixture and then the panko mixture. Then fry in batches in the canola oil until golden brown.
Serve these up as a snack, or an appetizer, at a group event or party! These come together in no time and this recipe makes the perfect amount of zucchini fries for sharing.
