Homemade Chicken Egg Rolls 

These savory eggrolls are stuffed with roasted chicken, veggies, and fried to crunchy perfection! They are paired with a perfect sweet apricot dipping sauce that will make your taste buds sing!

Slice peppers and onions. Use peeler to peel ribbons of carrots. Shred chicken

Step 01:

Add the apricot jam, water, soy sauce, and Dijon mustard into pot. Cook over medium heat for 10-15 minutes.

Step 02:

Add the sliced onions and peppers and cook until soft about 3-5 minutes. Take a carrot and use a peeler to peel the entire carrot then place the ribbons of carrot in the pan to soften for another 3-5 minutes

Step 03:

Serve these up with a side salad for a complete meal or honestly on their own because they are THAT GOOD!
