Banana Oat Pancakes

2 medium ripe bananas 2 eggs ½ cup milk 1 teaspoon vanilla extract 1 ½ cups old fashioned rolled oats 2 teaspoons baking powder ½ teaspoon ground cinnamon ¼ teaspoon salt Olive oil

Step 1:

Place all ingredients into a blender. Blend on high until the mixture is completely smooth. Allow the batter to rest in the blender while you preheat your pan. Lightly spray a griddle or pan with olive oil.

Pour ⅓ cup of the pancake batter onto the heated griddle or pan. Cook for 2-4 minutes, until bubbles form and the edges start to brown.

step 2:

Flip the pancakes and cook for an additional 2-3 minutes.

Step 3:

Spray the griddle or pan with olive oil again before starting the next batch. Every other batch, rinse the pan with cold water to cool it down.
